Champagne is made in tunnels cut into chalk, some of them Roman quarries, and the temperature down there never moves. You visit a large house first for the scale of the operation, then a family grower where the winemaker pours their own bottles and explains why they taste different. Between the two, lunch and a walk along the Avenue de Champagne in Epernay, which has more value under it than any other street in France.
